Greek Chicken Gyros with Zesty Tzatziki and Toasted Pita

Ingredients
  

Gyro Ingredients
  • 1.5 lbs Chicken Breast cut into 1-inch chunks
  • 2 tbsp Lemon Juice freshly squeezed
  • 3 tbsp Extra Virgin Olive Oil divided
  • 1 tbsp Dried Oregano plus extra for garnish
  • 1 cup Greek Yogurt thick, plain
  • 0.5 cup Grated Cucumber squeezed dry
  • 4 pieces Pita Bread thick and pocketless
  • 1 small Red Onion thinly sliced
  • 2 medium Tomatoes diced
  • 2 tbsp Fresh Dill chopped for garnish

Equipment

  • 1 Large Skillet Cast iron or non-stick
  • 2 Mixing bowls One for marinade, one for tzatziki

Method
 

Preparation
  1. Combine chicken, lemon juice, 2 tbsp olive oil, garlic, and oregano. Marinate for 20-30 minutes.
  2. Mix Greek yogurt, squeezed cucumber, garlic, and salt in a bowl. Refrigerate until assembly.
Cooking and Assembly
  1. Heat remaining oil in skillet. Sear chicken chunks until golden brown and cooked through (165°F/74°C).
  2. Briefly toast pitas in the same skillet until warm and soft.
  3. Layer chicken, tzatziki, onions, and tomatoes onto pitas. Garnish with fresh dill and dried oregano.

Notes

Ensure the cucumber is squeezed completely dry for the thickest tzatziki.
Use high heat for the chicken to get restaurant-style char marks.
