  • 1 small head (680g) Green Cabbage Shredded into ribbons
  • 2 medium Carrots Julienned into thin strips
  • 2 tbsp (30g) Fresh Ginger Grated
  • 3 cloves Garlic Minced
  • 1/4 cup (60ml) Soy Sauce Use Tamari for gluten-free
  • 1 tbsp (15ml) Toasted Sesame Oil
  • 1 tbsp (15g) Brown Sugar Or keto-friendly sweetener
  • 3 whole Green Scallions Sliced into circles for garnish
  • 1 tbsp White Sesame Seeds Toasted

  • 1 Wooden spoon

Method
 

Stir Fry Method
  1. Heat oil in a dark seasoned skillet over medium-high heat. Add ground beef and let sit undisturbed for 3-4 minutes to develop charred edges. Break into crumbles and cook until fully browned.
  2. Remove beef from pan. Add shredded cabbage and julienned carrots to the rendered fat. Sauté for 5-7 minutes until cabbage is softened but still vibrant green with blistered edges.
  3. Whisk sauce ingredients together and pour over vegetables. Return beef to the pan. Toss for 2-3 minutes until the sauce becomes a thick, dark mahogany glaze.
  4. Top heavily with sliced green scallions and toasted white sesame seeds before serving.

Notes

Ensure the cabbage is completely dry before adding to the pan for the best sear.
Double the ginger if you prefer a spicier, more pungent kick.
