  • 2 lbs Ground Chicken 907g, preferably a mix of light and dark meat
  • 1 cup Panko Breadcrumbs 60g
  • 1/2 cup Whole Milk 120ml
  • 2 large Eggs Beaten
  • 6 cloves Garlic Minced
  • 1/2 cup Fresh Parsley 15g, finely chopped and divided
  • 1 cup Mozzarella Cheese 112g, shredded and divided
  • 1 cup Parmesan Cheese 112g, freshly grated and divided
  • 1 tsp Salt 6g
  • 1/2 tsp Black Pepper 2g

  • 1 Large Mixing Bowl
  • 1 9x5 Loaf Pan or Baking Sheet
  • 1 Meat Thermometer

Method
 

Prepare the Mixture
  1. In a large bowl, combine milk, eggs, and panko. Let sit for 5 minutes to create a panade.
  2. Add ground chicken, minced garlic, half of the parsley, 1/2 cup parmesan, and 1/2 cup mozzarella. Season with salt and pepper. Mix gently until just combined.
Bake the Meatloaf
  1. Shape into a loaf on a lined pan. Bake at 375°F (190°C) for 35 minutes.
  2. Top with remaining cheese. Broil for 3-5 minutes until the crust is golden-brown and bubbly.
  3. Rest for 10 minutes. Garnish with remaining fresh parsley before slicing.

Notes

Use a meat thermometer to ensure the center reaches 165°F.
Do not over-mix the chicken to keep the texture light and airy.
