Ingredients
  

  • 1.5 lbs Cremini Mushrooms about 680g, wiped clean and larger ones halved
  • 4 tbsp Unsalted Butter 57g, divided
  • 1 tbsp Olive Oil 15ml
  • 4 cloves Garlic freshly minced
  • 0.25 cup Fresh Parsley about 15g, chopped
  • Kosher Salt to taste
  • Coarse Black Pepper to taste

Method
 

  1. Place a large skillet over medium-high heat. Add 1 tbsp (15ml) olive oil and 1 tbsp (14g) of butter. Once foaming, add mushrooms in a single layer (work in batches if needed). Cook undisturbed for 3-4 minutes until deeply browned on one side.
  2. Stir the mushrooms and cook for another 2-3 minutes. Reduce heat to medium-low, then add the remaining 3 tbsp (43g) of butter and 4 cloves of minced garlic. Sauté for 60 seconds, stirring constantly, until fragrant.
  3. Remove the skillet from the heat. Season with salt and pepper to taste. Stir in the fresh parsley, toss to coat, and serve immediately.

Notes

Don't Salt Too Early: Salt draws moisture out, preventing a good sear. Always season at the very end.
