Ingredients

Cake Ingredients
  • 1/2 cup Unsalted Butter 115g, softened
  • 1 cup Granulated Sugar 200g
  • 2 large Eggs Room temperature
  • 1 tsp Vanilla Extract 5ml
  • 1.5 cups All-Purpose Flour 190g
  • 1 tsp Baking Powder 5g
  • 1/2 tsp Salt 3g
  • 3-4 large Fresh Yellow Peaches Sliced into thin wedges, skin on
  • 1 tbsp Powdered Sugar For dusting

Equipment

  • 1 White Ceramic Baking Dish 9-inch round or square
  • 1 Electric Hand Mixer For creaming butter

Method

Preparation
  1. Preheat oven to 350°F (175°C). Grease a white ceramic baking dish thoroughly with butter to ensure caramelized edges.
  2. Beat the softened butter and granulated sugar together for 3-5 minutes until thick and fluffy.
  3. Incorporate eggs one at a time, then stir in the vanilla extract.
  4. Gently fold in flour, baking powder, and salt until just combined. The batter will be thick.
  5. Spread batter into the dish. Arrange peach wedges in an overlapping circular pattern, pressing slightly into the batter.
  6. Bake for 45-55 minutes until edges are toasted and a toothpick comes out clean. Dust with powdered sugar once cooled.

Notes

Ensure peaches are ripe but firm for the best texture.
Wait for the cake to cool slightly before dusting with sugar to prevent melting.
