  • 1.5 lbs (680g) Pink Gulf Shrimp Peeled, deveined, and patted dry
  • 1 disk Pastry Crust Buttery and chilled
  • 4 tbsp (56g) Unsalted Butter Divided use
  • 1/2 cup (75g) Red Bell Pepper Small diced
  • 1/2 cup (75g) Onion Minced until translucent
  • 1/4 cup (40g) Celery Finely chopped
  • 1/4 cup (30g) All-purpose Flour For the roux
  • 2 cups (480ml) Whole Milk Room temperature
  • 1 cup (115g) White Cheddar Cheese Shredded
  • 2 tbsp (8g) Fresh Parsley Finely chopped
  • 1 tsp (2g) Cracked Black Pepper Freshly ground

Equipment

  • 1 Rustic white ceramic baking dish 9-inch diameter
  • 1 Large Skillet For sautéing vegetables and making sauce

Method
 

Prepare the Filling
  1. Melt 1 tbsp butter in a skillet. Add red peppers, onions, and celery. Sauté until onions are translucent and peppers are tender.
  2. Melt remaining butter. Whisk in flour for 1 minute. Slowly whisk in milk until the sauce becomes thick and creamy.
  3. Stir in white cheddar, parsley, and black pepper. Remove from heat and gently fold in the raw pink shrimp.
Assemble and Bake
  1. Pour filling into a ceramic dish. Drape pastry over the top, crimp the edges, and cut vents for steam.
  2. Bake at 400°F (200°C) for 30 minutes until the crust is golden-brown and flaky.

Notes

Pat the shrimp completely dry before adding to the sauce to prevent a watery filling.
Use an egg wash on the crust for a professional golden-brown shine.
