  • 1/2 cup (125g) creamy peanut butter matte, light-brown
  • 1/4 cup (35g) roasted peanuts crushed into irregular chunks
  • 1 cup (175g) dark chocolate chips 70% cocoa preferred
  • 1 tsp (5ml) coconut oil for shine and texture
  • 1 pinch flaky sea salt for garnish

Method
 

Preparation
  1. Slice each Medjool date lengthwise to remove the pit, creating a small pocket for the filling.
  2. Spoon roughly 1-2 teaspoons of creamy peanut butter into each date cavity.
  3. Press crushed roasted peanuts into the peanut butter layer.
Coating
  1. Melt dark chocolate and coconut oil in the microwave in 30-second bursts until smooth and glossy.
  2. Using a fork, dip each date into the chocolate until fully coated. Place on parchment paper.
  3. Top with extra peanuts and sea salt. Refrigerate for 30 minutes until the shell is hardened.

Notes

Use Medjool dates for the best caramel-like texture.
Store in the freezer for a taffy-like consistency.
