- Slice each Medjool date lengthwise to remove the pit, creating a small pocket for the filling.
- Spoon roughly 1-2 teaspoons of creamy peanut butter into each date cavity.
- Press crushed roasted peanuts into the peanut butter layer.
Coating
- Melt dark chocolate and coconut oil in the microwave in 30-second bursts until smooth and glossy.
- Using a fork, dip each date into the chocolate until fully coated. Place on parchment paper.
- Top with extra peanuts and sea salt. Refrigerate for 30 minutes until the shell is hardened.
