  • 1 lb ground beef 450g, browned
  • 2 large green bell peppers sliced into strips
  • 1 large white onion softened and translucent
  • 8 oz brown mushrooms 225g, sliced
  • 20 oz refrigerated cheese-stuffed tortellini 567g
  • 8 oz provolone cheese 225g, for sauce
  • 1 cup heavy cream 240ml
  • 1 cup beef broth 240ml
  • 1 cup mozzarella cheese shredded, for topping
  • 1 tsp dried parsley flakes for garnish
  • 0.5 tsp cracked black pepper to taste

Method
 

Preparation
  1. In a large skillet over medium-high heat, cook the ground beef until well-browned. Add the sliced white onions and green bell peppers, sautéing for 3-5 minutes until the onions are translucent.
  2. Transfer the beef and vegetable mixture to the crock pot. Add sliced brown mushrooms, beef broth, and heavy cream. Cover and cook on LOW for 3 hours.
  3. Stir in the cheese-stuffed tortellini and provolone cheese. Cover and cook on HIGH for an additional 30-45 minutes until the tortellini are plump and tender.
  4. Sprinkle the shredded mozzarella over the top. Close the lid for 5 minutes until you have melted, stretchy white patches of cheese. Garnish with parsley and cracked black pepper.

Notes

Brown your beef first for maximum flavor.
Add tortellini at the very end to prevent mushiness.
Use freshly shredded cheese for the glossiest sauce.
