  • 2 large chicken breasts sliced into 4 cutlets
  • 1/2 cup (65g) all-purpose flour seasoned with salt/pepper
  • 2 large eggs beaten
  • 2 cups (120g) panko breadcrumbs for extra crunch
  • 4 slices cooked ham thinly sliced
  • 4 slices Swiss cheese thickly sliced
  • 1/2 cup (125g) Dijon mustard
  • 1/4 cup (85g) honey clover or wildflower
  • 1 tbsp fresh parsley finely chopped for garnish

Method
 

Prep and Bread
  1. Coat seasoned chicken cutlets in flour, dip in egg wash, and press firmly into panko breadcrumbs until jagged and fully coated.
  2. Heat oil in a skillet and fry chicken for 3-4 minutes per side until deep golden-brown and extra crunchy.
Melt and Serve
  1. Top each cutlet with a slice of ham and Swiss cheese. Cover pan or broil until cheese is bubbly and white.
  2. Whisk mustard and honey together until glossy. Serve on the side with a sprinkle of fresh parsley.

Notes

Use a wire rack to rest the chicken to maintain the crunchy bottom.
Double-press the panko for a thicker crust.
