  • 1 bag Corn Tortilla Scoops Approx 10 oz / 283g
  • 1 lb Ground Beef 80/20 lean-to-fat ratio (454g)
  • 2 tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1/2 cup Water 120ml
  • 1.5 cups Shredded Cheddar Cheese 340g, orange sharp cheddar
  • 1/2 cup Sour Cream 120ml, thick and opaque
  • 3 whole Jalapeños Fresh, sliced into rounds

Equipment

  • 1 Large Skillet For browning the beef
  • 1 Baking Sheet For melting the cheese

Method
 

Preparation
  1. In a large skillet, brown the ground beef over medium-high heat until finely crumbled and glistening. Drain excess fat.
  2. Add chili powder, cumin, garlic powder, and water. Simmer for 3-5 minutes until the sauce coats the meat.
  3. Fill corn scoops with meat, top with shredded cheddar, and bake at 350°F (175°C) for 3-4 minutes until cheese is melted.
  4. Top each scoop with a dollop of sour cream and a single jalapeño slice.

Notes

Wait 60 seconds after baking before adding sour cream to prevent melting.
Use a piping bag for the sour cream to get a professional look.
