- Heat oil in a cast iron skillet. Season chicken with salt and pepper. Sear for 3-4 minutes per side until golden-brown edges form. Remove and set aside.
- In the same pan, sauté garlic, ginger, and half the chilies for 1 minute until fragrant.
- Pour in coconut milk and fish sauce. Scrape the pan to deglaze. Bring to a simmer with small visible bubbles.
- Return chicken to the skillet. Simmer for 3 minutes. Garnish heavily with cilantro, remaining chilies, and black pepper.
Notes
Use full-fat canned coconut milk for the thickest sauce.
