Main Ingredients
  • 1 lb (450g) Farfalle (Bowtie) Pasta Cooked al dente
  • 1.5 lbs (680g) Chicken Breast Cut into bite-sized chunks
  • 2 medium Zucchini Sliced into half-moons (approx. 400g)
  • 1 cup (115g) Sharp Cheddar Cheese Freshly shredded
  • 1 cup (115g) Havarti Cheese Freshly shredded
  • 1.5 cups (360ml) Heavy Cream
  • 1 tsp Dried Herbs Parsley or Oregano
  • 0.5 tsp Cracked Black Pepper To taste

Equipment

  • 1 Large Skillet For searing chicken and making sauce.
  • 1 Baking Sheet For roasting zucchini.
  • 1 Pasta Pot To boil the farfalle.

Method
 

Prep and Roast
  1. Toss zucchini slices with oil and roast at 425°F (220°C) for 12-15 minutes until visible char marks appear.
  2. Cook farfalle in salted water for 1 minute less than package instructions. Reserve 1/2 cup pasta water.
Cook Protein and Sauce
  1. In a large skillet, sear chicken chunks until golden-brown and cooked through. Remove and set aside.
  2. Lower heat, add heavy cream to the skillet, and simmer. Whisk in cheddar and Havarti until thick and glossy.
  3. Toss the pasta, chicken, and charred zucchini into the sauce. Garnish with dried herbs and black pepper.

Notes

Use block cheese for the smoothest sauce.
Don't flip the zucchini during roasting to ensure deep char marks.
