Main Ingredients
  • 1.5 lbs Chicken Breasts Sized evenly for consistent cooking
  • 1.5 cups (300g) Orzo Pasta Dry, uncooked
  • 5.2 oz (150g) Boursin Garlic & Fine Herbs Cheese One full puck
  • 3 cups (710ml) Chicken Broth Low sodium preferred
  • 3 cups (90g) Fresh Baby Spinach Packed
  • 2 tbsp (30ml) Olive Oil For searing
  • 1 tsp Cracked Black Pepper Plus more for garnish
  • 2 tbsp Fresh Parsley Finely chopped

Equipment

  • 1 Cast-Iron Skillet A dark skillet provides the best sear.
  • 1 Wooden spoon For deglazing the pan.

Method
 

Prepare the Chicken
  1. Season chicken breasts with salt and pepper. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Remove and let rest.
  2. In the same skillet, add the dry orzo. Stir for 1-2 minutes until lightly toasted and fragrant.
Cook the Pasta and Sauce
  1. Add chicken broth to the skillet, scraping the bottom to release flavor. Bring to a simmer, then cover and cook for 8-10 minutes until orzo is tender.
  2. Stir in the Boursin cheese until melted and creamy. Fold in the fresh baby spinach until wilted.
  3. Slice the chicken and place atop the orzo. Garnish with plenty of cracked black pepper and fresh parsley.

Notes

Let the chicken rest for 5 minutes before slicing to keep it juicy.
If the sauce is too thick, stir in a splash of warm broth.
