Prepare the Chicken
- Season chicken breasts with salt and pepper. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through. Remove and let rest.
- In the same skillet, add the dry orzo. Stir for 1-2 minutes until lightly toasted and fragrant.
Cook the Pasta and Sauce
- Add chicken broth to the skillet, scraping the bottom to release flavor. Bring to a simmer, then cover and cook for 8-10 minutes until orzo is tender.
- Stir in the Boursin cheese until melted and creamy. Fold in the fresh baby spinach until wilted.
- Slice the chicken and place atop the orzo. Garnish with plenty of cracked black pepper and fresh parsley.
Notes
Let the chicken rest for 5 minutes before slicing to keep it juicy.
