  • 1/2 cup (120ml) Balsamic Vinegar High-quality aged
  • 3/4 cup (180ml) Extra Virgin Olive Oil First cold press
  • 1 tsp (5ml) Dijon Mustard Acts as the emulsifier
  • 1 tsp (5ml) Cracked Black Pepper Freshly ground
  • 1/2 tsp (2.5ml) Dried Oregano
  • 1 sprig Fresh Rosemary 2-inch sprig
  • 1/4 tsp (1.25ml) Sea Salt To taste

  • 1 Glass Mason Jar 8 oz or 16 oz size
  • 1 Whisk For manual emulsification

Method
 

Emulsification Process
  1. In a glass mason jar, whisk together the balsamic vinegar, Dijon mustard, salt, pepper, and dried oregano until well combined.
  2. Slowly drizzle in the olive oil while whisking constantly until the dressing becomes thick, creamy, and dark mahogany brown.
  3. Gently bruise the rosemary sprig and submerge it into the dressing. Seal the jar and shake vigorously for 30 seconds.

Notes

For a sweeter dressing, add 1 tsp of honey.
Always shake before using as some natural settling may occur.
