- Cook bacon in a cast iron skillet over medium heat until crispy. Crumb and set aside, reserving 2 tbsp of fat in the pan.
- Add chicken pieces to the skillet. Sear until golden brown on all sides. Remove and set aside.
- Boil gnocchi in salted water until they float. Drain immediately.
- In the skillet, whisk together cream cheese, heavy cream, and ranch seasoning until smooth and glossy.
- Stir chicken and gnocchi into the sauce. Top with cheddar, cover to melt. Garnish with bacon, scallions, and parsley.
Notes
Use freshly grated cheddar for the best melt.
