  • 1 lb (450g) Potato Gnocchi shelf-stable or refrigerated
  • 1.5 lbs (680g) Chicken Breast cut into bite-sized pieces
  • 8 oz (225g) Cream Cheese softened
  • 1 cup (240ml) Heavy Cream
  • 1 packet (28g) Ranch Seasoning
  • 1.5 cups (150g) Sharp Cheddar freshly shredded
  • 6 strips Bacon cooked and crumbled
  • 3 Scallions chopped
  • 1 tsp Dried Parsley

  • 1 Cast-Iron Skillet 12-inch preferred
  • 1 Large pot For boiling gnocchi

Method
 

Preparation
  1. Cook bacon in a cast iron skillet over medium heat until crispy. Crumb and set aside, reserving 2 tbsp of fat in the pan.
  2. Add chicken pieces to the skillet. Sear until golden brown on all sides. Remove and set aside.
  3. Boil gnocchi in salted water until they float. Drain immediately.
  4. In the skillet, whisk together cream cheese, heavy cream, and ranch seasoning until smooth and glossy.
  5. Stir chicken and gnocchi into the sauce. Top with cheddar, cover to melt. Garnish with bacon, scallions, and parsley.

Notes

Use freshly grated cheddar for the best melt.
Don't overcook the gnocchi; they should be soft and pillowy.
