Ingredients
  

Butter Mixture
  • 1 cup salted butter 227g, softened to room temperature
  • 1/4 cup fresh parsley 15g, finely chopped
  • 4 cloves garlic minced
  • 1 tsp dried red chili flakes 2g
  • 1 tbsp lemon zest 6g
  • 2 wedges fresh lemon for serving

Equipment

  • 1 Mixing Bowl Medium sized
  • 1 Parchment Paper For rolling the log

Method
 

Prepare the Mixture
  1. In a medium bowl, combine softened salted butter, finely chopped parsley, minced garlic, red chili flakes, and lemon zest.
  2. Fold ingredients together with a spatula until the herbs and spices are evenly distributed throughout the pale yellow butter.
Shape and Chill
  1. Transfer the butter to parchment paper and roll into a thick cylindrical log, twisting the ends to seal.
  2. Refrigerate for at least 2 hours until firm and flavors have melded.
  3. Slice into medallions and serve on a rustic wooden board with lemon wedges.

Notes

Use fresh parsley only for the best color and flavor.
Do not microwave the butter to soften it, as it will affect the final texture.
