Ingredients
  

Chip Base
  • 1 cup (225g) Full-Fat Cottage Cheese Small curd preferred
  • 1 tsp (1g) Dried Oregano Rubbed between palms
  • 1/2 tsp (1g) Cracked Black Pepper Freshly ground

  • 1 Baking Sheet Large size
  • 1 Parchment Paper Brown, non-bleached preferred

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Scoop 1 tablespoon mounds of cottage cheese onto the parchment, leaving 2 inches of space between each.
Baking
  1. Flatten each mound slightly and sprinkle with dried oregano and cracked black pepper.
  2. Bake for 25-30 minutes until the edges are dark charred and the centers are translucent and bubbly.
  3. Allow to cool completely on the tray for 10 minutes to reach maximum crispness.

Notes

Ensure you use parchment paper, not a silicone mat, for the best lacy texture.
If your cottage cheese is very wet, strain it slightly before baking.
