Prepare the Dough
- Cream softened butter and granulated sugar in a large bowl until light and fluffy (approx 3 minutes).
- Beat in the egg, vanilla, and espresso powder (mixed with a tiny drop of water) until smooth.
- Slowly mix in the flour, baking soda, and salt until just combined. Do not overmix.
Bake and Decorate
- Roll dough into balls and chill for 15 minutes. Preheat oven to 350°F (175°C).
- Bake for 10-12 minutes until edges are crisp and golden but centers are soft.
- Whisk glaze ingredients until thick. Drizzle messy mocha lines over cooled cookies and garnish with granules.
