Ingredients
  

Cookie Dough
  • 1 cup Unsalted Butter Softened (227g)
  • 1.25 cups Granulated Sugar (250g)
  • 1 Large Egg Room temperature
  • 1 tsp Vanilla Extract (5ml)
  • 2 tbsp Instant Espresso Powder (10g)
  • 2.5 cups All-Purpose Flour (312g)
  • 1 tsp Baking Soda (5g)
  • 0.5 tsp Sea Salt (3g)
Espresso Glaze & Garnish
  • 1 cup Powdered Sugar (120g)
  • 1.5 tbsp Strong Brewed Espresso or heavy cream mixed with espresso powder
  • 1 tsp Instant Coffee Granules For garnish

  • 2 Baking Sheet Lined with parchment paper
  • 1 Electric Hand Mixer

Method
 

Prepare the Dough
  1. Cream softened butter and granulated sugar in a large bowl until light and fluffy (approx 3 minutes).
  2. Beat in the egg, vanilla, and espresso powder (mixed with a tiny drop of water) until smooth.
  3. Slowly mix in the flour, baking soda, and salt until just combined. Do not overmix.
Bake and Decorate
  1. Roll dough into balls and chill for 15 minutes. Preheat oven to 350°F (175°C).
  2. Bake for 10-12 minutes until edges are crisp and golden but centers are soft.
  3. Whisk glaze ingredients until thick. Drizzle messy mocha lines over cooled cookies and garnish with granules.

Notes

Ensure ingredients are room temperature for the best emulsion.
Chill the dough to ensure the crackle effect occurs properly in the oven.
