Prep and Sear
- Pat the pork dry. Rub with oil and season with salt and half the cracked peppercorns.
- In an oven-proof skillet, sear the pork on all sides until golden brown, about 3-4 minutes per side.
Roast and Glaze
- Whisk Coca-Cola, brown sugar, soy sauce, and garlic. Pour into the skillet with the pork. Add fresh rosemary.
- Place in a 375°F (190°C) oven. Roast for 45-60 minutes, basting every 15 minutes, until internal temp reaches 145°F (63°C).
Final Sauce
- Remove pork to a white ceramic platter and rest for 15 minutes.
- Simmer the pan juices on the stovetop for 8-10 minutes until a thick, syrupy brown reduction sauce forms. Drizzle over sliced pork.
