  • 3-4 lb boneless pork loin 1.4-1.8 kg
  • 2 cups Coca-Cola 480ml, classic full-sugar
  • 1/2 cup brown sugar 110g, packed
  • 1/4 cup soy sauce 60ml
  • 4 cloves garlic smashed
  • 3-4 sprigs fresh rosemary needles removed and scattered
  • 1 tbsp cracked black peppercorns 6g, coarsely cracked
  • 1 tbsp neutral oil 15ml, for searing

Method
 

Prep and Sear
  1. Pat the pork dry. Rub with oil and season with salt and half the cracked peppercorns.
  2. In an oven-proof skillet, sear the pork on all sides until golden brown, about 3-4 minutes per side.
Roast and Glaze
  1. Whisk Coca-Cola, brown sugar, soy sauce, and garlic. Pour into the skillet with the pork. Add fresh rosemary.
  2. Place in a 375°F (190°C) oven. Roast for 45-60 minutes, basting every 15 minutes, until internal temp reaches 145°F (63°C).
Final Sauce
  1. Remove pork to a white ceramic platter and rest for 15 minutes.
  2. Simmer the pan juices on the stovetop for 8-10 minutes until a thick, syrupy brown reduction sauce forms. Drizzle over sliced pork.

Ensure you use classic Coca-Cola for the sugar content required for caramelization.
Always use a meat thermometer to ensure a moist, pinkish-white center.
