  • 1 whole Brioche bun split and toasted
  • 1 large Egg fried with set whites
  • 1 slice Sharp yellow cheddar cheese approx 28g
  • 1 tbsp Salted butter divided
  • 2 tbsp Mayonnaise
  • 1 tsp Chipotle in adobo sauce finely minced
  • 1/4 tsp Dried chili flakes for micro-specks

  • 1 Spatula

Method
 

Preparation
  1. Mix mayonnaise, chipotle adobo, and dried chili flakes in a small bowl until creamy orange and well combined.
  2. Melt half the butter in a skillet over medium heat. Toast brioche buns cut-side down until golden-brown edges appear.
  3. Add remaining butter. Fry egg, folding the whites inward to fit the bun size. Ensure whites are set but yolk remains soft.
  4. Place cheddar on the egg and cover with a lid for 30 seconds until glistening and drooping.
  5. Spread chipotle mayo on the top bun and place over the cheese-covered egg stack.

Notes

Use medium-low heat to avoid burning the brioche.
Cover the pan briefly to get the perfect cheese melt without overcooking the yolk.
