Bowl Ingredients
  • 1.5 lbs Chicken Breast Boneless, skinless
  • 2 large Sweet Potatoes Cubed (500g)
  • 4 cups Kale and Spinach mix 120g
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Fresh Parsley 60g
  • 1/2 cup Extra Virgin Olive Oil 120ml
  • 2 tbsp Red Wine Vinegar 30ml
  • 1/2 cup Greek Yogurt 120g

Equipment

  • 1 Grill or Grill Pan For charred chicken marks
  • 1 Food Processor For chimichurri texture
  • 1 Baking Sheet For sweet potatoes

Method
 

Preparation
  1. Toss sweet potato cubes with oil and salt; roast at 400°F (200°C) for 25-30 minutes until edges are caramelized.
  2. Season chicken and grill for 6-7 minutes per side until charred grill marks appear and internal temp reaches 165°F.
  3. Pulse chimichurri ingredients in a food processor. Whisk together yogurt, garlic, and lemon for the white sauce.
  4. Layer sautéed greens, roasted potatoes, sliced chicken, and tomatoes in a matte grey bowl. Drizzle with both sauces and garnish with cilantro.

Notes

Ensure the grill is very hot before adding chicken to get the best char marks.
Store sauces separately to keep the greens crisp.
