Ingredients
  

Chicken & Base
  • 1.5 lbs Chicken Breast Cubed into 1-inch pieces
  • 2 tbsp Olive Oil For searing
  • 1 tsp Dried Oregano
Fresh Toppings
  • 1.5 cups Basmati Rice Uncooked
  • 1 cup Cherry Tomatoes Halved
  • 1 large Cucumber Sliced
  • 1/2 small Red Onion Thinly sliced
  • 1/2 cup Kalamata Olives Pitted
The Finish
  • 1/2 cup Tzatziki Sauce Thick and creamy
  • 1/4 cup Feta Cheese Crumbled
  • 2 tbsp Fresh Parsley Chopped
  • 1 tsp Dried Dill Sprinkled over sauce

  • 1 Saucepan For cooking basmati rice

Method
 

Preparation
  1. Rinse 1.5 cups (285g) of basmati rice until water is clear. Cook in 3 cups (710ml) of salted water until fluffy. Fluff with a fork.
  2. Season 1.5 lbs (680g) cubed chicken breast with salt, pepper, and oregano. In a large skillet, heat olive oil over medium-high. Sear chicken for 6-8 minutes until golden-brown and cooked through.
Assembly
  1. Divide cooked rice into 4 bowls. Arrange chicken, cherry tomatoes, cucumbers, red onions, and olives in distinct sections on top of the rice.
  2. Add a large dollop of tzatziki to the center. Sprinkle with dried dill, crumbled feta, and fresh parsley.

Notes

For extra flavor, marinate the chicken in lemon juice and garlic for 30 minutes before cooking.
Always pat the chicken dry before searing to ensure a golden crust.
