Preparation
- Rinse 1.5 cups (285g) of basmati rice until water is clear. Cook in 3 cups (710ml) of salted water until fluffy. Fluff with a fork.
- Season 1.5 lbs (680g) cubed chicken breast with salt, pepper, and oregano. In a large skillet, heat olive oil over medium-high. Sear chicken for 6-8 minutes until golden-brown and cooked through.
Assembly
- Divide cooked rice into 4 bowls. Arrange chicken, cherry tomatoes, cucumbers, red onions, and olives in distinct sections on top of the rice.
- Add a large dollop of tzatziki to the center. Sprinkle with dried dill, crumbled feta, and fresh parsley.

For extra flavor, marinate the chicken in lemon juice and garlic for 30 minutes before cooking.
