Ingredients
  

Potato Base
  • 2 lbs (900g) Russet Potatoes cut into thick wedges
  • 3 tbsp (45ml) Avocado Oil or vegetable oil
  • 1 tsp (5g) Salt plus more to taste
Protein and Cheese
  • 1 lb (450g) Ground Beef Lean (80/20 or 90/10)
  • 2 tbsp (15g) Taco Seasoning Store-bought or homemade
  • 1 cup (113g) Orange Cheddar Cheese shredded
  • 1 cup (113g) Monterey Jack Cheese shredded
Fresh Toppings
  • 2 medium Red Tomatoes finely diced
  • 3 stalks Green Onions thinly sliced
  • 1/2 cup (120ml) Sour Cream thick white dollop

Equipment

  • 1 Baking Sheet Large enough to spread potatoes in a single layer
  • 1 Cast-Iron Skillet 10 or 12-inch rustic black skillet
  • 1 Large Skillet For browning the beef

Method
 

Roasting the Potatoes
  1. Preheat oven to 425°F (220°C). Toss sliced potato wedges with oil and salt on a baking sheet.
  2. Roast for 25-30 minutes, flipping halfway through, until golden-brown with crispy charred edges.
Preparing the Beef
  1. In a large skillet over medium-high heat, brown the ground beef into small crumbles. Drain grease.
  2. Add taco seasoning and a splash of water. Simmer for 2 minutes until beef is coated in dark taco spices.
Assembly
  1. Place roasted potatoes in a cast iron skillet. Top with beef and both cheeses. Broil for 2-3 minutes until bubbly.
  2. Top with diced tomatoes, green onions, and a central dollop of sour cream. Serve immediately.

Notes

Use a high-starch potato like Russets for the best crunch.
