  • 12 each Beef Hot Dogs Full-sized franks
  • 6 slices Sharp Cheddar Cheese Cut into thin strips
  • 4.5 cups (540g) Bread Flour Provides best chew
  • 1.5 cups (355ml) Warm Water 110°F/43°C
  • 2 tbsp (30g) Unsalted Butter Melted
  • 2.25 tsp (7g) Active Dry Yeast 1 packet
  • 2/3 cup (120g) Baking Soda For the water bath
  • 1 tbsp Coarse Sea Salt For topping
  • 1 tsp Dried Parsley Fine flecks

  • 1 Stand Mixer With dough hook attachment
  • 1 Large pot For the baking soda bath
  • 2 Baking Sheet Lined with parchment paper

Method
 

Dough Preparation
  1. Combine warm water and sugar in mixer; sprinkle yeast on top. Let sit 5 mins until foamy.
  2. Add butter, salt, and flour. Knead with dough hook for 5-7 mins until smooth and tacky.
Assembly & Bake
  1. Place cheese strip on dog; spiral wrap dough rope around both, pinching ends to seal.
  2. Boil in water/baking soda mixture for 30 seconds. Remove with slotted spoon.
  3. Brush with egg wash, sprinkle with salt/parsley, and bake at 425°F for 12-15 mins until deep golden brown.

Notes

Use bread flour for the most authentic chewy texture.
Ensure the water bath is a rolling boil for the best crust color.
