Burrito Components
  • 4 large Flour Tortillas 10-inch size
  • 2 cups (300g) Frozen Tater Tots Deep-fried until crispy
  • 1 cup (115g) Sharp Orange Cheddar Cheese Freshly grated
  • 1/2 cup (120ml) Sour Cream Full-fat
  • 3 whole Green Scallions Finely chopped
  • 2 cups (480ml) Vegetable Oil For frying
  • 1 teaspoon Sea Salt To season

  • 1 Heavy-bottomed Skillet For frying and toasting
  • 1 Cheese Grater For fresh cheddar

Method
 

Prepare the Tots
  1. Heat oil to 375°F (190°C) and fry tater tots for 4-5 minutes until golden brown with visible salt crystals.
  2. Remove tots from oil and drain on paper towels; immediately season with sea salt.
Assemble and Sear
  1. On each tortilla, layer hot tots, sharp cheddar, a drizzle of sour cream, and chopped scallions.
  2. Fold into a tight burrito and sear in a hot skillet seam-side down until light brown char marks appear.
