  • 1 lb (454g) Ground Beef 80/20 lean recommended
  • 1 tsp (5g) Garlic Powder
  • 8 oz (227g) Sharp Yellow Cheddar Cut into 12 cubes
  • 1 lb (454g) Pretzel Dough Or pizza dough
  • 1/2 cup (120ml) Baking Soda For the boiling water bath
  • 2 tbsp White Sesame Seeds For topping
  • 1 tbsp Coarse Sea Salt For topping

  • 1 Large Skillet For browning beef
  • 1 Large pot For the alkaline bath
  • 2 Baking Sheet Lined with parchment paper

Method
 

Prepare the Filling
  1. In a skillet over medium-high heat, brown the ground beef with garlic powder, salt, and pepper until fully cooked. Drain all excess grease and set aside to cool slightly.
  2. Divide dough into 12 pieces. Flatten each into a disk. Place 1 tablespoon of beef and a cheddar cube in the center. Pinch the edges to seal into a ball.
The Pretzel Bath and Bake
  1. Bring a large pot of water to a boil and add baking soda. Boil each dough ball for 30 seconds, then remove with a slotted spoon to a prepared baking sheet.
  2. Sprinkle with sea salt and sesame seeds. Bake at 425°F (220°C) for 12-15 minutes until deep golden-brown and glossy.

Notes

Ensure the beef is drained well to prevent soggy dough.
Wait 5 minutes before eating to let the cheese set.
