  • 2 cups all-purpose flour 250g
  • 1 tablespoon baking powder 12g
  • 1 teaspoon salt 6g
  • 1 tablespoon dried basil flakes 2g
  • 2 large eggs room temperature
  • 1 cup whole milk 240ml
  • 1/3 cup extra virgin olive oil 80ml
  • 1 cup shredded mozzarella 113g
  • 1 cup cherry tomatoes 150g, halved

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, and dried basil.
  3. In another bowl, whisk the eggs, milk, and olive oil until fully combined.
  4. Fold the wet ingredients into the dry until just moistened. Gently fold in 3/4 of the mozzarella and half of the halved cherry tomatoes.
  5. Pour batter into the pan. Press the remaining tomatoes into the top and sprinkle with the remaining cheese. Bake for 45-55 minutes until the loaf is golden brown and a toothpick comes out clean.

Notes

Pat tomatoes dry before adding to batter to prevent soggy spots.
Let the bread cool for 10 minutes before slicing to set the cheese pockets.
