Main Ingredients
  • 1 lb (450g) Sirloin or Ribeye Steak Cut into thick strips
  • 12 oz (340g) Penne Pasta Cooked al dente
  • 2 cups (225g) White Cheddar Cheese Freshly shredded
  • 1.5 cups (350ml) Heavy Cream
  • 2 tbsp Cajun Seasoning Divided use
  • 1/4 cup (15g) Fresh Parsley Finely chopped

Equipment

  • 1 Cast-Iron Skillet Essential for a heavy sear on the steak.
  • 1 Large pot For boiling the penne.

Method
 

Prepare the Steak
  1. Rub steak with 1 tbsp Cajun seasoning and salt. Let sit for 20 minutes.
  2. Sear in a hot skillet for 3-4 minutes per side until a brown crust forms and the center is pink (130°F). Rest for 8 minutes then slice.
Prepare the Pasta and Sauce
  1. Cook penne in salted water until al dente. Reserve 1 cup of pasta water.
  2. Simmer heavy cream with garlic, then whisk in white cheddar gradually until thick and glossy.
  3. Toss pasta in sauce. Top with steak strips, fresh parsley, and extra Cajun flakes.

Notes

Ensure the steak is dry before searing for the best crust.
Use room temperature cheese to prevent the sauce from breaking.
