Ingredients
  

Fudgy Brownie Base
  • 1/2 cup unsalted butter 115g, melted
  • 1 cup granulated sugar 200g
  • 1/2 cup cocoa powder 45g, unsweetened
  • 2 large eggs room temperature
  • 1 tsp vanilla extract 5ml
  • 1/2 cup all-purpose flour 65g
  • 1/4 tsp salt 1.5g
Cheesecake Layer
  • 8 oz cream cheese 225g, softened
  • 1/4 cup granulated sugar 50g
  • 1 large egg
  • 2 tbsp sour cream 30ml
Topping
  • 1/2 cup dark chocolate chips 90g, for ganache
  • 1/4 cup heavy cream 60ml
  • 2 tbsp mini semi-sweet chocolate chips 30g

Equipment

  • 1 8x8 inch baking pan Lined with parchment paper
  • 2 Mixing bowls
  • 1 Hand Mixer For the cheesecake layer

Method
 

Prepare the Brownie Base
  1. Preheat oven to 350°F (175°C). Whisk melted butter and sugar. Add eggs and vanilla, beating until combined.
  2. Fold in cocoa powder, flour, and salt until smooth. Spread in a lined 8x8 pan.
  3. Bake for 15-18 minutes until the edges are just set.
Prepare the Cheesecake Layer
  1. Beat softened cream cheese and sugar until smooth. Mix in the egg and sour cream on low speed.
  2. Pour over the brownie base and bake for 20-25 minutes until the center has a slight jiggle. Chill for 3+ hours.
Decoration
  1. Melt dark chocolate chips with heavy cream to create a glossy ganache. Drizzle over the chilled bars.
  2. Sprinkle with mini semi-sweet chocolate chips and slice into squares.

Notes

Use a hot, clean knife for perfect square cuts.
Ensure the cream cheese is fully room temperature to avoid lumps in the white layer.
