  • 2 cups long-grain white rice 370g, rinsed
  • 1.5 lbs chicken breast 680g, sliced into strips
  • 1 cup BBQ sauce 285g, thick mahogany style
  • 1 can sweet corn 425g, drained for charring
  • 1 can black beans 425g, rinsed and seasoned
  • 0.5 cup orange cheddar cheese 56g, shredded
  • 0.5 small red onion finely diced
  • 0.25 cup fresh cilantro chopped
  • 4 wedges fresh lime for serving

  • 1 Small skillet For charring corn
  • 1 Saucepan For steaming rice

Method
 

Cook the Elements
  1. Rinse rice until clear. Combine with 4 cups (950ml) water and salt. Boil, then simmer covered for 15 minutes. Let sit for 5 minutes before fluffing.
  2. Sear chicken strips in oil over medium-high heat until char marks appear. Add BBQ sauce and toss until a thick mahogany coating forms.
  3. Place corn in a dry skillet over high heat for 3 minutes until edges are charred and roasted.
  4. Layer rice in a white ceramic bowl. Arrange chicken, corn, beans, onion, and cheese in distinct sections. Garnish with cilantro and lime.

Notes

Use a heavy-bottomed skillet for the best char marks on the chicken.
Rinse your rice 3 times to ensure it stays fluffy and separate in the bowl.
