Flatbread Ingredients
  • 1 large Oval Flatbread approx 150g
  • 1.5 cups Cooked Chicken Breast 225g, cut into chunks
  • 1/2 cup Dark BBQ Sauce 120ml, divided
  • 1 cup Mozzarella Cheese 115g, shredded
  • 1/4 medium Red Onion thinly sliced into rings
  • 1 tbsp Olive Oil 15ml
  • 2 tbsp Fresh Cilantro chopped for garnish

  • 1 Pastry Brush For olive oil

Method
 

Assembly and Baking
  1. Preheat oven to 425°F (220°C). Brush flatbread edges with olive oil for a charred crust.
  2. Spread 2 tbsp of BBQ sauce over the flatbread. Sprinkle evenly with mozzarella cheese until bubbly white spots are covered.
  3. Toss chicken chunks in remaining dark BBQ sauce until heavily coated. Arrange on cheese along with thin red onion rings.
  4. Bake for 8-12 minutes until cheese shows golden-brown spots and crust edges are slightly charred.
  5. Sprinkle with fresh green cilantro and serve immediately.

Notes

Use a high-sugar BBQ sauce for the best mahogany glaze.
For a crispier base, place the flatbread directly on the oven rack for the last 2 minutes.
