Assembly and Baking
- Preheat oven to 425°F (220°C). Brush flatbread edges with olive oil for a charred crust.
- Spread 2 tbsp of BBQ sauce over the flatbread. Sprinkle evenly with mozzarella cheese until bubbly white spots are covered.
- Toss chicken chunks in remaining dark BBQ sauce until heavily coated. Arrange on cheese along with thin red onion rings.
- Bake for 8-12 minutes until cheese shows golden-brown spots and crust edges are slightly charred.
- Sprinkle with fresh green cilantro and serve immediately.

Use a high-sugar BBQ sauce for the best mahogany glaze.
