- Pat the salmon fillets dry with paper towels. Cut into uniform 1-inch cubes. Toss with salt, pepper, and cornstarch until lightly coated.
- In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth and glossy orange.
Cooking
- Heat oil in a large skillet over medium-high heat. Add salmon cubes in a single layer. Sear for 2-3 minutes until a deep golden-brown crust forms, then flip and cook for 2 more minutes.
- Place seared salmon in a bowl. Drizzle with sauce in a zig-zag pattern. Garnish with black and white sesame seeds and chopped scallions.
