The Salmon Bites
  • 1.5 lbs Salmon Fillets Skinless, cut into 1-inch cubes (680g)
  • 2 tbsp Cornstarch 16g
  • 2 tbsp Avocado Oil 30ml
  • 0.5 tsp Salt and Pepper To taste
Bang Bang Sauce
  • 0.5 cup Mayonnaise 120ml
  • 3 tbsp Sweet Chili Sauce 45ml
  • 1 tbsp Sriracha 15ml
  • 1 tsp Honey 7g
Toppings
  • 1 tsp White Sesame Seeds Toasted (3g)
  • 1 tsp Black Sesame Seeds Toasted (3g)
  • 2 tbsp Green Scallions Finely chopped (12g)

Equipment

  • 1 Large Skillet Cast iron or non-stick preferred for the best sear.
  • 2 Mixing bowls One for salmon, one for sauce.

Method
 

Preparation
  1. Pat the salmon fillets dry with paper towels. Cut into uniform 1-inch cubes. Toss with salt, pepper, and cornstarch until lightly coated.
  2. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth and glossy orange.
Cooking
  1. Heat oil in a large skillet over medium-high heat. Add salmon cubes in a single layer. Sear for 2-3 minutes until a deep golden-brown crust forms, then flip and cook for 2 more minutes.
  2. Place seared salmon in a bowl. Drizzle with sauce in a zig-zag pattern. Garnish with black and white sesame seeds and chopped scallions.

Notes

Use center-cut salmon for even cooking.
Ensure the pan is shimmering hot before adding the fish to get a crispy crust.
