Prepare the Salmon
- Pat salmon dry. Cut into 1-inch cubes. Toss with avocado oil, salt, pepper, and cornstarch.
- Arrange on a baking sheet and bake at 425°F (220°C) for 12-15 minutes until edges are charred.
Sauce and Finish
- In a bowl, mix mayo, sweet chili sauce, and sriracha until creamy and orange.
- Toss hot salmon cubes in the sauce. Garnish with green onions and chili flakes.
Notes
Use a wire rack on the baking sheet for even more airflow and crispiness.
