  • 1.5 lbs Salmon Fillets Skinless, cut into 1-inch cubes
  • 1 tbsp Avocado Oil High smoke point for charring
  • 1 tbsp Cornstarch For extra crispiness
  • 1/2 tsp Sea Salt
  • 1/2 cup Kewpie Mayonnaise Substitute with regular mayo if needed
  • 1/4 cup Sweet Thai Chili Sauce
  • 1 tbsp Sriracha Add more for extra heat
  • 2 stalks Green Onions Finely sliced for garnish
  • 1/2 tsp Red Chili Flakes

Method
 

Prepare the Salmon
  1. Pat salmon dry. Cut into 1-inch cubes. Toss with avocado oil, salt, pepper, and cornstarch.
  2. Arrange on a baking sheet and bake at 425°F (220°C) for 12-15 minutes until edges are charred.
Sauce and Finish
  1. In a bowl, mix mayo, sweet chili sauce, and sriracha until creamy and orange.
  2. Toss hot salmon cubes in the sauce. Garnish with green onions and chili flakes.

Notes

Use a wire rack on the baking sheet for even more airflow and crispiness.
Double the sauce if you want to serve these as a bowl over rice.
