  • 3 cups (510g) White Chocolate Chips High quality recommended
  • 1 can (14oz/397g) Sweetened Condensed Milk
  • 1 pkg (3.4oz/96g) Instant Banana Cream Pudding Mix Dry powder
  • 1 tsp (5ml) Vanilla Extract
  • 1/4 tsp (1.5g) Sea Salt
  • 25-36 pieces Mini Vanilla Wafers Whole cookies
  • 1/4 cup (45g) White Chocolate Melting Wafers For drizzle

  • 1 8x8 inch square pan Lined with parchment paper
  • 1 Microwave-safe bowl Large

Method
 

Prepare the Pan
  1. Line an 8x8 inch square pan with parchment paper, leaving an overhang on two sides.
Make the Fudge
  1. In a large microwave-safe bowl, combine white chocolate chips and sweetened condensed milk. Heat in 30-second bursts, stirring until completely smooth.
  2. Quickly stir in the dry pudding mix, vanilla, and salt until fully incorporated and the mixture is a creamy pale yellow.
  3. Pour the mixture into the prepared pan and smooth the top with a spatula.
Garnish and Chill
  1. Press whole mini vanilla wafers into the top of the fudge in a grid pattern. Drizzle with melted white chocolate zig-zags.
  2. Refrigerate for at least 2-3 hours until firm. Slice into thick squares using the mini wafers as a guide.

Notes

For the cleanest cuts, use a warm knife and wipe it between each slice.
Ensure you use 'Instant' pudding mix, not the 'Cook and Serve' variety.
