  • 2 medium Zucchini Sliced into 1/4 inch rounds
  • 1/2 cup All-purpose flour (60g)
  • 2 large Eggs Beaten
  • 1.5 cups Panko breadcrumbs (90g)
  • 1/2 cup Parmesan cheese Finely grated, divided
  • 1 tsp Dried herb seasoning Oregano or Italian blend
  • 1/2 tsp Cracked black pepper Freshly cracked
  • 1/2 cup Mayonnaise (120ml)
  • 2 cloves Garlic Minced

  • 3 Shallow Bowls For the dredging station

Method
 

Preparation
  1. Slice zucchini into 1/4 inch rounds and pat thoroughly dry with paper towels.
  2. Set up bowls with flour, beaten eggs, and the panko-parmesan-herb mixture.
Cooking
  1. Dip each round in flour, then egg, then press firmly into the panko mixture until heavily coated.
  2. Arrange in a single layer in the air fryer basket. Cook at 400°F (200°C) for 8-10 minutes until golden brown with charred edges.

Notes

Work in batches to avoid overcrowding the air fryer.
Reheat at 375°F for 3 minutes to restore crunch.
